make a pouch out of aluminum foil, put fish in pouch with some italian dressing, seal pouch and bake for 15-20 min. depending on size of fish...

Cullen Skink - a sort of soup/stew

Recipe:
1 large smoked haddock (or cod, or whiting)
1 onion (or leek) finely chopped
11/2 pts milk
2 tablespoons butter
8oz cooked mashed potato
salt and pepper.

Poach the fish in enough water to cover until it flakes, remove skin and bones and set aside
Strain the poaching water, add the onion and cook until onion is just soft
Add the milk and bring to boiling point, then add enough mashed potato to produce the consistency you like
add the flaked fish, and the butter in small pieces, so it just melts into the soup.
Serve with crusty bread.
(This recipe is traditional from the Moray Firth. Skink comes from the Gaelic, and originally meant "essence" nowadays it means a cross between a soup and a stew.

I make this quite simply by making leek and potato soup, and add smoked fish which has been poached in milk, adding the milk to the soup, and garnishing with parsley and chives, and if feeling wicked adding a few spoonfuls of cream.

It really depends on what kind of fish--
White fish, cod, bass,those types of fish
my fave is to take thin slices of lemon and put them in the bottom of a pan- lay the fish fliets on top of the lemons slices
sprinkle with a little dill
then cover the fish with bread crumbs, then sprinkle with parmesean cheese, drizzle melted butter over the top and bake at 350 until the fish flakes easily and the bread crumbs are browned a little. You can spray with a butter flavored spray instead of thebutter if you like.

Wrap a fish fillet, some lemon slices, dill, 1 tablespoon of butter, and salt and pepper loosely in foil and bake in a 400 degree oven for 12-15 minutes. Open and serve with a salad and some crustly bread.

Raw w/ shoyu & wasabi, or.... dusted w/just flour or Panko, or egg wash & flour or Panko (Japanese breadcrumbs, better than flour) then sauteed w/ butter & olive oil, capers, white wine, then finish w/ lemon juice, cook for 1 more minute then Voila! This recpie is for fillets not whole fish. Salt & pepper to taste, you can season fish first & also in the panko mixture.Whole fish, steamed then sprinkle diced green onions, & pour hot peanut oil over it, & a little shoyu.(Chinese Restraraunt Style) You can add a little minced Ginger Root on top w/ the green onions. Unreal!

Take a big square of foil,place the fish on top.Add peppers,onions,garlic and a little chopped tomato.Add your favorite herb,Basil,dill,cilantro or a mix .fold foil arond to make a pouch.Bake,broil or grill until fish is done,time varies depending on the kind of fish that you use.It usually does'nt take long,15 or 20 minutes.Carefully open the pouch,it will be steamy.Squirt on some fresh lemon juice and serve over fresh rice and steamed spinach.

For salmon fillets, flavor with salt and thyme, then drizzle with olive oil. Bake in oven at 400 degrees until fish is no longer pink--will depend on how thickly sliced the fish is.

Steam a piece of whole fish (sea bass is good).
Chop up some fresh ginger and spring onions.
Heat up some cooking oil and toss in the ginger and spring onions.
Add some soy sauce.
Pour over the fish.

Enjoy with steamed rice.

Fish, tomato, green seasoning, peppers, onions steamed in garlic butter. Takes 5 mins to prepare and about same to cook.

Its a nice simple,special meals for two or more or even treat yourself to SALMOM .buy two salmon steaks (or More)'. wrap in a package of tnfoil irst smearing buttter and ground black pepper on them cook in a hot oven for 15 mins meanwhile steam some new potatoes and fine green beans or carrots veg of your choice . make a sauce either hollandaise or parsley or a white sauce with splash of white wine. Cheat but buying pkt of mix
