Marinate chicken breasts in fresh lemon juice, olive oil, salt, pepper, and fresh herbs if you have them. Thyme works well.

Otherwise use fresh lemon on steamed broccoli or asparagus, or squeeze it into your water.

This recipe is really great when using fresh lemons.

Lemon Delight Cheesecake
10 servings

1 1/2 c Graham Cracker Crumbs
1/4 c Sugar
1/2 c Margarine, Melted
1 ea Env. Unflavored Gelatin
1/3 c Cold Water
1/3 c Lemon Juice (from fresh lemons is best)
3 ea Large Eggs, Separated
1/2 c Sugar
1 t Grated Lemon Peel
16 oz Cream Cheese, Softened *

* Or use 2 8-oz containers of Philly soft cream cheese.

Combine crumbs, sugar and margarine; reserve 1/2 cup. Press
remaining onto bottom of 9-inch springform pan.

Soften gelatin in water, stir over low heat until dissolved.
Add juice, egg yolks, 1/4 cup sugar, and peel; cook, stirring
constantly, over medium heat, 5 minutes.

Gradually add to cream cheese, mixing at medium speed on
electric mixer until well blended.

Beat egg whites, until foamy; gradually add remaining sugar
beating until stiff peaks form.

Fold into cream cheese mixture; pour over crust.
Top with reserved crumbs; chill until firm.

This recipe is SOOOOOO good... It's from the South Beach diet, but it's good even if you are not dieting. I know it won't use all your lemons, but I just wanted to share. The lemon zest is KEY here.

Makes 10 servings

Olive Oil Cake Made with extra-virgin olive oil instead of butter and whole-wheat instead of white flour, this cake is a healthful, yet deliciously moist and flavorful treat. The lively lemon flavor makes it perfect for serving on its own or with fresh fruit or plain low fat yogurt.

1 1/2 cups whole-grain pastry flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
3 large eggs, separated
3/4 cup granular sugar substitute
1/2 cup 1 percent or fat-free buttermilk
1/2 cup extra-virgin olive oil
2 teaspoons lemon extract
1 tablespoon grated lemon zest

Heat oven to 350°E Lightly coat an 8-inch springform pan with cooking spray.

Whisk together flour, baking soda, baking powder, and salt in a large bowl; form a well in the center.

Beat egg whites with an electric mixer at high speed in a medium bowl until stiff peaks form, about 3 minutes.

Beat egg yolks, sugar substitute, buttermilk, oil, lemon extract, and lemon zest in a medium bowl at medium speed until smooth, about 1 minute.

Pour egg yolk mixture into the center of the dry ingredients; stir gently until just combined. Gently fold in half of the egg whites, then fold in the remaining egg whites.

Pour batter into pan and bake until edges are lightly browned and a toothpick inserted in the center of the cake comes out clean, 25 to 28 minutes. Let cool in the pan for 5 minutes; remove from the pan and transfer to a wire rack. Cut into wedges and serve warm or at room temperature.

Per serving: 190 calories, 13 g fat, 2 g saturated fat, 4 g protein, 13 g carbohydrate, 1 g dietary fiber, 180 mg sodium

Make preserved lemons, quarter them and pack with kosher salt. keep in a cool place for a month. use in slow cooked dishes.

Make lemonade. combine 1 cup of sugar with 1 cup water, bring to boil with zest from one of the lemons. juice 3 or 4 of the lemons, add to a gallon of water with the syrup. Taste to see if you need more juice or sugar.

Lemon granita: make syrup like above. add juice from 3 - lemons after syrup cools, and 1 cup of water. add some vodka if you like. pour liquid into shallow container, freeze till solid. scrape with fork to eat.
