As long as you cook it thoroughly before you eat it, there shouldn't be a problem. I do it all the time.

if you are really worried, cook the meat and then freeze it... works well with ground beef that you are going to put into pasta sauce etc... even cooked chicken can be frozen and then warmed through to eat

You never want to refreeze meat after it's been thawed.

It's okay for beef as long as it's been in the fridge and cold but not chicken or pork
