Cut in thin strips, cook on stove.

Thin strips because as you bit into the taco, you and your guests also want to bite through the meat.

I'd cook it on the stove, slowly, with some liquid, to further tenderize, make sure you put a lid on it. You can take the opportunity to add some more spices, if you like. That way they can cook into the meat. Rib eye is usually fairly tender, so it should not take forever..
Hope you saved some lime for the taco sauce. Sounds yum.
I'm hungry for some chipotle suace. Longhorn Steakhouse here I come.

Chop the meat in to bite size pieces...Add olive oil to your pan...raise the heat...throw you meat in and saute it till done....Don't over cook or it will be tough.
