both, but if it's anything like fish and fishes (yes it's actually a word) then the "s" version refers to several types. For instance, "I have a lot of fruit" means you have a crapload of fruit. "i have a lot of fruits" means you have several different kinds of them. At least that's what I'd guess.

I use fruits when I write it on my grocery list. I also use it when I tell people to eat fruits and vegetables for weight loss and diet.
