White cheddar is so awesome....but then a baked brie in pastry is too good to pass up, especially if there's a bottle of Merlot sitting there.

Mozzarella, Monterey Jack, Cheddar, and Pepper Jack...never really tried all those fancy weird cheeses lol

Blue cheese is terrific melted onto beef. It gives the meat a sharp, smoky flavor. And brie is good with crackers. It is also a slightly smoky flavored cheese.
