If it's hot, then maybe you don't want to cook. How about a salad, with veggies, or even some cheese on top. Of you could make about a million kind of subs or sandwiches. If plain bread is boring, try hoagie rolls with some lettuce and tomato.

On hot days we like something like a cold pasta salad with grilled chicken or grilled ham steaks. Yeah you have to go outside in the heat for a few minutes at a time, but you don't heat up your kitchen and house and you get a good, quick, easy meal that you like and doesn't make you feel horrible cause of the heat. We try to keep a couple different salads on hand, ready to eat at a moments notice.

Get some ripe tomatoes and stuff them with homemade tuna salad. Then serve them with some corn chips and cheese dip. This is light and easy to make...no cooking or hard labor. I make my tuna salad with fresh squeezed lemon, mayonaise and chopped celery. Cut your tomatoes 3/4 down like a pie so that you have about 8 wedges surrounding your scoop of tuna salad. Put the stuffed tomato on a bed of romaine lettuce. YUMMMMM
If you do not like tuna then make chicken salad instead.
Make some homemade Iced Tea and serve it with the rest of your lemon cut in wedges....Lots of ice to keep you cool.

Bistro Dinner Salad:
This is a perfect light and quick yet refined meal. The mustard tarragon vinaigrette complements the slightly bitter salad greens, while the pear adds a hint of sweetness.
3 tablespoons finely chopped walnuts
4 large eggs
Cooking spray
2 bacon slices (uncooked)
8 cups gourmet salad greens
1/4 cup (1 ounce) crumbled blue cheese
1 Bartlett pear, cored and thinly sliced
1 tablespoon white wine vinegar
1 tablespoon extravirgin olive oil
1/2 teaspoon dried tarragon
1/2 teaspoon Dijon mustard
4 (1-inch-thick) slices French bread baguette, toasted
Place nuts in a small skillet; cook over medium-high heat 3 minutes or until lightly browned, shaking pan frequently. Remove from heat; set aside.
Break 1 egg into each of 4 (6-ounce) custard cups coated with cooking spray. Cover with plastic wrap, and microwave at high for 40 seconds or until set; let stand 1 minute. Remove eggs from cups; drain on paper towels.
Cook bacon in a skillet over medium-high heat until crisp; cool slightly. Remove bacon from the pan, reserving 1 teaspoon drippings. Crumble bacon. Combine walnuts, bacon, greens, blue cheese, and pear in a large bowl.
Combine 1 teaspoon reserved drippings, vinegar, oil, tarragon, and mustard in small bowl; stir with a whisk. Drizzle over greens mixture; toss gently. Arrange 2 cups salad mixture on each of 4 serving plates; top each serving with 1 egg and 1 toast slice.
Yield: 4 servings

Salad with black beans, shredded colby jack cheese, crushed tortilla chips, and for the dreading I use salsa and ranch. If you have chicken it's a great use for leftovers in this salad. I hope you try it!!
