1 box elbows: cooked, drained & rinsed w/ cold water
1 seedless cucumber: peeled and chopped
1 jar sliced green olives
1 pkg baby frozen peas:thawed
enough HELLMANN"S mayo to make creamy (usually 1/2 jar)
salt & pepper to taste
mix all together and chill for about an hour.

This one is really good

Cheddar Macaroni Salad
Yield: 1 Salad

Ingredients

3 c medium shell macaroni
2 c cubed cheddar cheese
1 c chopped celery
1/2 c chopped green pepper
1/4 c chopped onion
1 c dairy sour cream
1 c mayonnaise or salad dressing
1/4 c milk
1/2 c sweet pickle relish
4 ts vinegar
1 1/2 ts prepared mustard
3/4 ts salt

Instructions

In a large kettle cook macaroni in a large amount of boiling salted
water until tender; drain. Cool to room temperature. Toss with
cheese, celery, green pepper and onion.

Combine sour cream, mayonnaise or salad dressing, and milk; stir in
relish, vinegar, mustard and salt. Toss with macaroni mixture.

Cover and chill for several hours.

Serve in a lettuce lined bowl. Garnish with green pepper rings if
desired.

WORLD'S BEST MACARONI SALAD

1 1/2 lb box of elbow macaroni
1/2 bunch of green onions - chopped
1/2 tsp salt (or more to taste)
1/2 ea. red, orange, green and yellow peppers. total: 2 whole peppers
2 tsp dijon mustard (generous)
1 1/2 cups Hellman's Mayonnaise
celery salt

Cook Macaroni in salted water. Drain noodles.
While noodles are still hot, mix in mustard and mayonnaise in large bowl.

Mixture should be wet, but not creamy. Stir in Onions and peppers and salt. Mix well.

Taste for salt and mayonnaise content. Add more if needed. Coat top of salad with a sprinkling of celery salt and stir in.

Cover and refrigerate a few hours to allow onion and pepper flavors to permeate.

Serve cold.

**We slice up the left over peppers and serve with Ranch dressing as a before the picnic snack**

All these recipes are good but to make A great macaroni salad you must use salad dressing.

This is one I grew up on. It's not going to be the exact but, if you've cooked long enough, you'll be able to do it.

*MIX EVERYTHING TO YOUR LIKING*

INGREDIENTS
1. Elbow noodles, or any other short pasta noodle
2. Mayo
3. sour cream
4. cucumber
5. tomato ( I like to use Cherry tomatoes - slicing them in 4's)
6. salt and pepper to taste
7. ( THESE ARE OPTIONAL) Onions, green bell pepper, bacon bits

Directions

Cook enough pasta that you will need, drain, add to bowl
add mayo to cover noodles
add sour cream ( about a spoonful )
dice up your cucumber and tomato - throw it in the bowl-
add the onions and bell pepper and bacon bits (remember they all are optional)
SALT AND PEPPER TO TASTE


- STIR ALL TOGETHER
if the salad looks dry.... add a dash of milk or water or mayo to thicken it , if you want it thicker.

--- I like to add a few dashes of " RANCH " salad dressing powder mix, or of course the premixed dressing will work---


--- sorry I dont have exact measurements.... But, it's easy.. just take out a spoon and taste as you go... :)
