If you cover it with water before putting in fridge it won't brown as badly.
Better to cook the whole thing and save the remaining cooked portion in the fridge. They really don't hold up well once they are cut, but cooking would make it last quite a while.

Put it in the fridge and use it within a day or two. With the inside exposed, it's more likely to grow bacteria now if left out.

Let the potato half cool,place in baggie. When ready to eat whats left ,Mash with fork put grated cheeze and microwave until cheese is very melted or put in oven(hopefully with something else that you are heating) for about 10-15 min. at 350
