Quick and Easy Broccoli Soup Recipe

2 tablespoons unsalted butter or olive oil
1 medium onion, chopped
1-2 teaspoon minced garlic, from a jar or fresh garlic
2 large russet potatoes, peeled and diced
1 pinch dried thyme leaves
1/2 teaspoon kosher salt, plus more to taste
2 (10 ounce) boxes frozen cut broccoli in cheese sauce, thawed
4 cups homemade chicken broth or canned low sodium chicken broth
fresh ground black pepper

1. Melt the butter in a medium saucepan, over medium heat.
2. Add the onion and garlic and cook until translucent, about 5 minutes.
3. Add the potatoes, thyme, salt, and broth and bring to a boil.
4. Adjust the heat to maintain a gentle simmer, and cook uncovered until the potatoes are fork tender, about 10-15 minutes.
5. Add the broccoli with cheese sauce.
6. Simmer another 5-10 minutes.
7. Puree the soup in batches in a blender or with an immersion blender.
8. I like mine a little bit more chunky so I use
9. a potato masher to smash the broccoli and potatoes leaving some texture in the soup.
10. Bring to a simmer, taste, and season with salt
11. and pepper.
12. Enjoy!

Broccoli Cheese Soup

Ingredients

(6 servings)

1 c Water
1 (10-ounce)package frozen chopped broccoli
2 c Milk
2 c Cubed Velveeta cheese
1/2 c All-purpose flour
1 c Half-and-half
2 Chicken bouillon cubes


Instructions

In large saucepan, cook broccoli in 1 cup water; do not drain. Put milk, cheese, and flour into blender; cover and blend until smooth. Add half-and-half and bouillon cubes. Cook, stirring, over medium heat until hot and mixture thickens. Mixture will thicken more upon sitting.
Makes 6 cups.

This is a good, filling soup. I like to have it with sandwiches or Pepperoni Bread.
1 bunch broccoli
1/2 cup butter
1 medium onion, chopped
1/2 cup flour
2 cups milk
1 cup grated mild cheddar cheese or sharp cheddar cheese
2 cans chicken broth
salt and pepper
Velveeta cheese

6 servings Change size or US/metric
Change to: servings US Metric

25 minutes 10 mins prep
Cook broccoli until tender& drain.
Cook onions in butter until tender& transparent.
Stir in flour& cook 5 minutes, stirring constantly.
Add milk slowly, stirring constantly.
Stir in grated cheese until smooth.
Slowly blend broth into sauce.
Add Velveeta cheese and stir until melted.
Puree 1/2 cup of the broccoli with a fork (or in the food processor).
Cut the rest of the broccoli into pieces.
Add all broccoli to the soup.
Simmer 15 minutes.
You can add more Velveeta for a cheesier flavor.

Ingredients:

* 1 (14 1/2-ounce) can chicken broth
* 1 (10-ounce) package frozen chopped broccoli
* 1 cup fat free skim milk
* 2 tablespoons all-purpose flour
* 6 ounces (1 1/2 cups) LAND O LAKES® Deli American Cheese, cubed 1/2-inch


Instructions:

Place chicken broth and broccoli in 2-quart saucepan. Cook over medium-high heat until mixture comes to a boil (8 to 10 minutes). Reduce heat to medium. Cook until broccoli is tender (6 to 8 minutes).

Stir together milk and flour in small bowl until smooth. Slowly add flour mixture to soup, stirring constantly. Continue cooking, stirring occasionally, until mixture comes to a full boil (4 to 5 minutes). Boil 1 minute. Reduce heat to low. Stir in cheese until melted (3 to 4 minutes).

Yield: 4 (1-cup) servings

12 c Dry milk powder
3 tb Chicken bouillon powder
1 t Dry minced onion
Black pepper
5 oz Frozen chopped broccoli --
Cook
1 tb Sour cream
1 tb Butter
1 sl Kraft Singles Cheddar --
Cut bits

Into blender put first 6 ingredients. Blend on high
until smooth. Pick out larger pieces of broccoli iand
put in blender. blend those until tiny bits. Put aside
3/4 c cooking water from broccoli and discard rest of
water. Pour blender mixture into top of double boilier
over simmering water, stirring until smooth and
thickened. Stir in cooking water and broccoli, diced
fine. Add remaining ingredients.

Start with chicken broth, either made with a chicken cube or canned. Thicken it with a mixture of butter and flour, add lft over broccoli, cut in very small pieces, and then add shredded cheese.A variety of cheeses is good. Amounts of each ingredient can vary. Add salt and pepper to taste.

some cheddar cheese, mix them together in a pot and put on the stove. (make sure to shred the broccoli and onions well. should look like a paste almost when shredded right.) then all you have to do is heat it up. and viola!
