The night before cut up some fruit such as plums, strawberries, kiwis, etc. add some grapes it's something you could eat easily at a red light or when you get to work, which would be better. Also bagels are great, quickly pop them in the toaster and you're out the door. Yogurt smoothies, just grab and go. If you are watching your weight Slim Fast bars and drinks are great for on the go breakfasts. Also granola bars, frozen breakfast sandwiches (take a minute to heat in the microwave), Nutri Grain bars.

Not exactly "healthy" but filling and tasty are the breakfast burritos I'll leave wrapped in the fridge for my husband. I cook up the sausage, scramble a few eggs, layer just-so onto a soft tortilla, add some cheese and then fold into a burrito. I leave them in the fridge overnight well wrapped in waxed paper so they can go straight to the microwave and then into the car with him. Or he nukes them at work.
Pancakes can also be reheated in the microwave easily but they do take time to eat and we haven't figured out to make them "portable" yet.

Granola bars or premade fat free muffins are great!
Or...
You could get crafty and make some breakfast cups--These are easy and jsut take a tiny bit of prep time.(U Can make one night!)
Fill (Pam sprayed)muffin pans with egg-bacon- or precooked sausage and bake these with a sprinkle of cheese on top---
You can pop these out easily over the week and pop in the microwave--these are geat and make you think you have had a great breakfast--
You can also make some fruit cups--fill "" pans with cupcake liners---graham cracker crumbs, vanilla pudding and fruit to top--and chill--
Hope this helps--

DO not eat cereal bars, yes they are low in fat, but some have more sugar than a mars bar, go for fruit.
