I don't know what the carb count would be from the tomatoes, but if you dipped them in grated parmesean cheese instead of bread crumbs and then fried them, you wouldn't get the carbs from the coating.

There is a product you can coat the tomatoes with, which is low carb. It is called Carbquick, and you can find it at netrition.com. You can also use it to make pizzas and breads. So, basically follow the instructions for the "normal" recipe for fried green tomatoes, but use Carbquick instead of flour or breadcrumbs. I remember also, dr Atkins always used to suggest using Shake n Bake for coating stuff.

Fried Green Tomatoes II
1 medium green tomatoes (per person)
salt
pepper
white cornmeal
bacon drippings
We don't know how many servings this makes.

1. Slice tomatoes about 1/4 inch thick, season with salt and pepper and then coat both sides with cornmeal.
2. In a large skillet, heat enough bacon drippings to coat the bottom of the pan, and fry tomatoes until lightly browned on both sides.

The only reason I grow my own tomatoes is so that I can enjoy fried green ones! Traditionally, this requires a coating and a bunch of grease. Last year, I discovered a new and wonderfully low fat way to have the same taste. I bought a grill basket for my outdoor grill. I spray the basket with a low fat cooking oil, add sliced green tomatoes, sliced okra, sliced onions and even a little jalapeno. All this tosses and cooks outside on my BBQ. It is great.

Dip the tomatoes into a little bit of corn starch then eggs then parmigiana cheese not carb free but low carb

if you fry anything, it isn't low carb

I have tried it though. You can bread and fry anything really. Flour or corn meal, cayenne, salt and pepper, into flour first , then eggs, then the coating, then fry it. Olive oil is best.

NOT low calorie or low carb though
