I have a huge abundance of cucumbers, I need some great ideas for preserving them. I am all pickled out!

YES you could.

METHOD FOR FREEZING CUCUMBERS
BRINE:
2 c. sugar
1 3/4 c. white vinegar
1/4 c. pickling salt
All can be doubled for more. Use 12 cucumbers more or less and peeled and sliced onions. Boil the brine and cool. When cool, pour over cucumber and onion slices. Let stand 6 hours then freeze. Serve as is or can add cream and dressing.

CUCUMBERS FOR FREEZING
7 c. thinly sliced cucumbers
3 med. onions, sliced
1 green pepper, chopped
2 c. sugar
1 c. vinegar
1/2 tsp. celery seed
1 tbsp. salt
Mix all ingredients in large bowl. Refrigerate for 24 hours. Put in containers and freeze. Great side dish in the middle of winter. Just defrost to serve.

CUCUMBERS ON ICE
2 qts. thinly sliced cucumbers
1 med. onion, thinly sliced
1 tbsp. plus 2 tsp. salt, divided
1 1/2 c. sugar
1/2 c. apple cider vinegar
Place cucumbers and onions in bowl, sprinkle with 1 tablespoon salt. Let stand at room temperature 2 hours. Drain and return to bowl. Sprinkle with remaining salt, sugar and vinegar and stir well. Put in freezer containers and freeze. Serve anytime after freezing. After thawing, store in refrigerator. Makes 7 cups.

FROZEN CUCUMBER PICKLE RELISH
8 c. sliced, peeled cucumbers
5 tsp. salt
1 c. thinly sliced onion rings
1 c. green peppers, chopped
1 c. celery, sliced
2 c. sugar
1 c. vinegar
1 tbsp. mustard seed
2 tsp. celery seed
Soak cucumbers in salt and water to cover for 30 minutes. Drain. Rinse in clean water. Drain. Mix all vegetables together. Place into freeze containers. Combine sugar, vinegar, mustard and celery seed. Mix well. Pour over vegetables to cover and freeze. Thaw before serving.

FROZEN CUCUMBER ROUNDS
Approx. 2 qt. cucumbers, sliced paper thin
1 lg. onion, sliced thin
1 1/2 c. sugar
2 tbsp. salt
1 c. cider vinegar
Heat sugar in vinegar to dissolve. Let cool.
Place cucumbers, onions and salt in large container, cover with cold water. Stir well and let stand in refrigerator at least 2 hours or even overnight. Drain. Pour sugar-vinegar mixture over cucumbers and onions. Mix well. Put in freezer containers, leaving 1/2 inch headspace.
Freeze. May start eating these next day after freezing.

This is what I do and they are great in the middle of winter
freezer pickles

Mix
2 cups sugar
1 3/4 white vinegar
1/4 cup pickling salt
HEAT until dissolved, let stand 20-40 minutes

Peel and slice somewhat thinly (thicker than the shredder)
12 cucs, 2 to 3 inches in diameter

Seed and de-vein and cut into thin strips
2 large bell peppers

Slice and seperate
2 large onions

Mix the veggies well with the liquid.
Pack in plastic freezer boxes and freeze.

These are a useful way to store extra cucs. The thawed and drained
product is very fresh tasting and is a treat in the off season.

They don't freeze well at all. Try slicing some up and putting them in a bowl and adding water, salt, pepper, veg. oil, and a little vinegar (a few tablespoons at a time, don't add too much or it will turn sour) to cover all the cut up cucumbers and almost all the way to the top of the bowl and cover it and it will sit like that in your fridge for a few weeks. Put them into a plastic bag and vacume all the air out. then put them into the freezer or leave them at room temp

no, you can't freeze them, I would give them away or make pickles - that can last a long time.

No.

Freezing causes them to become soft and tasteless when thawed.

they will thaw all mushy. Give them away to friends and neighbors
