Probably open-faced hamburgers. Haven't had them in a while.
Mix ground beef with seasonings, chopped onion and shredded cheese. Make patties very, very thin and about 1/2 inch bigger than bun. Place on bun and broil until done. If the patties are too thick, the bun will burn before meats done so watch them.
They're a nice change from regular hamburgers!

Tomato Tart
1 sheet Pepperidge Farm puff pastry
about 4 medium size tomatoes (different colors are nice)
about 4oz. smoked mozzarella
1 bunch fresh spinich, washed and tough stems removed
Thaw pastry sheet, place on a baking sheet lined w/parchment and dock the pastry (poke holes in it) all over except around the edges. brush w/olive oil.
Wilt cleaned spinach in a frying pan with 1 T. butter, dash salt, pepper & nutmeg.
Slice tomatoes and cheese, alternating in rows to cover pastry, leaving about an inch all around. Scatter the wilted spinich over top. Sprinkle tart with small amount of olive oil, balsamic vinegar and basil.
Bake @ 400 degrees 20 minutes.
Tip: You don't want the tomatoes too juicy. Pressing the slices (gently!) between 2 paper towels will help

Herb Roast Chicken and Vegetables
Here's a great recipe to pop in the oven while you enjoy a little time in the garden.
1/4 cup olive or vegetable oil
2 tablespoons chopped fresh thyme leaves or 1 teaspoon dried thyme leaves
2 tablespoons chopped fresh marjoram leaves or 1 teaspoon dried marjoram leaves
1/2 teaspoon salt
1/4 teaspoon coarsely ground pepper
1 lemon
1 whole roasting chicken, 4 pounds
6 new potatoes, cut in half
1 cup baby-cut carrot
1/2 pound green beans
1 . Heat oven to 375°F. Mix oil, thyme, marjoram, salt and pepper. Grate 1 teaspoon peel from lemon; add peel to oil mixture. Cut lemon into fourths; place in cavity of chicken.
2 . Fold wings of chicken across back with tips touching. Tie or skewer drumsticks to tail. Place chicken, breast side up, on rack in shallow roasting pan. Brush oil mixture on chicken. Insert meat thermometer in chicken so tip is in thickest part of inside thigh muscle and does not touch bone.
3 . Roast uncovered 45 minutes. Arrange potatoes, carrots and green beans around chicken; brush chicken and vegetables with oil mixture. Roast uncovered 30 to 45 minutes or until thermometer reads 180°F and juice of chicken is no longer pink when center of thigh is cut. Let stand about 15 minutes for easiest carving. Remove lemon and discard.
4 . Place chicken on platter; arrange vegetables around chicken. Serve with pan drippings.

bbq ribs w/ side of bbq chicken!! Yummy, but really i'd rather eat some of the stuff posted on here. My hubby is a meat and potatoes guy and i would love some sushi or a salad.

We are having sausage, egg, and cheese bagels. The bagels are some I picked up at the deli yesterday. They are called everything bagels. They have sesame seeds, poppy seeds, garlic, and lots of other seasonings on them. Very yummy. It is better with bacon or ham, but I forgot to buy that.

I will have some steak roll-ups with stir fry steak, fried onions and green peppers - wrapped in a tortilla with garlic-mustard sauce. So good, so easy.

we are bbq-ing chicken and shrimp tonight. the shrimp is put on skewers, and I am making a peanut butter marinade for the chicken. Rice and homegrown zucchini on the side.
