Vanilla and Cinnamon pancakes
2 cups all-purpose flour, stirred or sifted before measuring
2 1/2 teaspoons baking powder
2 tablespoons ground cinnamon
1/2 teaspoon salt
1 egg, slightly beaten
1 1/2 cups milk
1 teaspoon pure vanilla extract
2 tablespoons melted butter
hazelnuts (optional)

PREPARATION:
Sift together flour, baking powder, cinnamon and salt. In a separate bowl, combine egg and milk; add to flour mixture, add vanilla extract, stirring only until smooth. Blend in melted butter. Cook on a hot, greased griddle, using about 1/4 cup of batter for each pancake: cook until bubbles rise through the middle of the pancake and break on the top, and edges begin to look dry ; turn and brown the other side. Sprinkle with hazelnuts. Serve with maple syrup and butter.
TIPS:
# Test the pan before cooking the pancakes by throwing a few drops of water onto it. If the water jumps around and then disappears, the pan is at the correct temperature
# Increase the amount of cinnamon if you like a very strong flavor
# keep warm in a single layer on baking sheets in a 200° oven for up to 15 minutes
# For ONLY Vanilla pancakes don't use the cinnamon
# For ONLY cinnamon pancakes don't use the vanilla

Just get some cinnamon muffin mix add a little vanilla and follow the directions to make pancakes Martha White is the best. Recipe is on the back. Also get any store bought pancake mix like Hungry Jack or Bisquick and add some vanilla and cinnamon.
