Try some smoked or marinaded salmon on wholegrain bread, with a simple tomato, cucumber (with the skin on) and red onion salad, a spot of mayonnaise, and a nice glass of chilled white wine, or chilled fizzy apple juice if you prefer not to take alcohol.
P.S. A packet of vacuum packed smoked salmon from the supermarket always does 2 meals, and if you can get them on Buy one get one free they are not extravagant (and no waste) Freeze the second packet, and have it next week

Get some frozen peas, a tin of sweetcorn, some frozen sprouts or cauli/broccoli and a tin of tomatoes. Put some oil in a saucepan. Slice and fry one onion for five minutes. Add some spices ( i suggest 1 tsp cumin, 1 tsp coriander,1/4 tsp chilli powder, garlic and ginger to taste, stir-fry 30 seconds. Add tomatoes, juice and all, then add the veg and enough water to cover them. Bring to boil, simmer 20 mins. If the sauce seems a bit thin, add some arrowroot, cornflour or plain flour, and tomato puree.
Result - a light, very tasty meal that costs next to nothing.
If you do not have the spices, some curry paste will do.
This dish originates from the Punjab region of India.

Well, here in California we'd probably have something like nice cool nachos. Pile a plate high with tortilla chips and then top that with cheese that you love. Meanwhile, dice up half an avocado, a tomato, some green onions, some cilantro, black olives, and a can of green chilies. Mix it all together and squeeze a lemon wedge over it. Sprinkle on some garlic powder, salt, and pepper. Now put your chips in the microwave for about a minute. when done, top with your mixture, and then your favorite taco sauce or salsa. I use El Pato.

I live in Arizona USA and it's been about 108-115 here. I think you should have some sliced luncheon meat (salami, turkey etc). Some kind of bread w/some good olive oil for dipping, mozzerella cheese, olives, sliced tomatoes, fresh basil. You can place the cheese, tomato and basil on the bread w/ a little olive oil and balsamic vinegar.
Ice cream or something cool for something sweet.
good luck w/the heat.

Salad nicoise.
salad leaves, some boiled new spuds, a boiled egg, 2 quartered tomatoes, sliced black olives, sliced big spring onion, small tin of tuna, handful of trimmed green beans. Olive oil and balsamic vinegar mediterannean herbs, salt pepper
Lay out the leaves on a big plate or pasta bowl, splash on some oil, vinegar, lay the other ingredients on the top tuna last, season and add some more oil vinegar to your preference. Enjoy.

Why not a great fruit salad with carmel dipping sauce, some iced tea and some Wheatables. It's been 92-98 here in New Mexico, USA so I understand! Enjoy whatever you have!!!!

I call my mid-day meal lunch, in specific situations only snack. Im not sure why although. and that i call my night meal supper. sturdy question although, i replace into questioning if everyone called their mid-day meal dinner.
