This is my favorite recipe for days when you find out guests are coming on short notice.

Broccoli Cheese Meatloaf

Mix up hamburger as you would for meatloaf adding some french onion soup mix to the mixture for extra flavouring.
On a sheet of tin foil or wax paper pat the hamburger into an oblong shape about 3/4 of an inch thick.
Cover hamburger with ham slices.
Top with a layer of cheese slices or shredded cheddar cheese.
Sprinkle chopped fresh broccoli over the cheese.
Lifting the end of the tin foil roll the meat up like a jelly roll.
Seal the ends and and transfer the roll to a baking dish.
Cook at 350 degrees for 45 minutes, spread with barbecue sauce and triangles of cheese slices and cook another 10 to 15 minutes.
Slice and put on a platter.
It's simple to make, tastes great and looks so fancy everyone will think you've been slaving in the kitchen all day.
