Chocolate truffles are a wide group of chocolate confectionery, comprising a gooey, sweet centre, coated in chocolate or cocoa powder, usually in a spherical or curved shape. The fillings are extremely varied and may include cream, melted chocolate, caramel, nuts, almonds, berries or other assorted sweet fruits, nougat, fudge or toffee, mint, chocolate chips, marshmallow and popularly liquor. They do not actually contain any truffle, but are named for their appearance. They sort of look like truffles.

A truffle is either filled with or is ganache, which is often flavored. Ganache is a mixture of dark chocolate, butter and cream which forms a frosting-like consistency.

One recipe I make you just chop the chocolate in a bowl, heat a cup of heavy cream, then pour the hot cream over the chocolate and stir. Refrigerate this mixture until hardened, then use a teaspoon to roll balls of the ganache and then roll in cocoa powder. That's one way to make a truffle. Another is to then dip it in chocolate. I also like to add a few teaspoons of rum to this recipe for flavoring.

A truffle is filled with a chocolate ganache. Ganache is made from chocolate, cream and butter and is thick enough to form into balls, but soft enough that it is pliable. The ganache can be flavored with various liqueurs or oils, and the truffle can be dipped in chocolate.
They were called truffles because they were formed by hand and rough looking, and resembled the fungus called truffles. Traditionally they were garnished by rolling them in cocoa powder to resemble dirt. (Because fungus truffles grow underground, and are often covered in a layer of dirt.)
