Depends on his age. He might just be at that point where kids put anything in their mouths.
If he's old enough to know better, he might be suffering from Pica, a mental illness, or some sort of nutrional deficiency. See a physician.

I would take him to the doctor, he may have a vitamin deficiency which causes him to eat the caulk.

I would mention this to his doctor. Every weird thing you eat is because you are lacking something in your diet. Some people chew pencils, eat ice, stuff like that.
