Malayan Pork With Satay Sauce

1 lb boneless pork loin
salt (to taste)
fresh ground pepper (to taste)
2 cups coconut milk, divided (light is fine)
2 teaspoons brown sugar
SATAY SAUCE
1 garlic clove
1 small onion, chopped
1 cup water (approximate)
1 cup peanuts, shelled
3 dried hot chili peppers (can substitute 1/2 tsp red pepper flakes)
2 pieces preserved gingerroot or candied ginger
1 tablespoon light soy sauce
1 teaspoon turmeric
1/2 teaspoon salt
1/2 lemon, juice of
4 servings

1. FOR PORK:.
2. Cut the pork into bite-size cubes. Season with salt and pepper to taste. Thread on skewers and marinate in one cup of coconut milk for at least 1 hour.
3. Preheat grill to medium high heat. Grill pork for 15 to 20 minutes. Baste meat often with the remaining cup of coconut milk while grilling. Serve with satay sauce (as follows).
4. SATAY SAUCE:.
5. Put all sauce ingredients in the blender or food processor. Process/blend for 30 seconds.
6. Pour sauce into the top of a double boiler. Place top of double boiler over direct heat (you will need to boil water in the bottom of the double boiler separately) and bring to a boil, stirring frequently. Move top of double boiler from heat into the bottom of the double boiler containing the boiling water (are you confused yet? LOL). Cook sauce for 30 minutes, stirring occasionally. Thin to desired consistency with water or additional coconut milk. Serve over grilled meat.

Japanese Pork Satay
Yield: 1 Serving

Ingredients

1 lb boneless pork loin
2 tb smooth peanut butter
1/2 c onion; minced
1 clove garlic; minced
2 tb lemon juice
2 tb soy sauce
1 tb brown sugar
1 ds hot pepper sauce; (Tabasco)
1 tb cooking oil

Instructions

Cut pork into 1/2" cubes. Blend remaining ingredients together in a
blender.

Marinate pork in this mixture for several hours to overnight. Thread pork
on skewers and grill over hot coals for eight to 10 minutes, turning
occasionally, until done.

Note: If using bamboo skewers, soak skewers in water for one hour or longer
to prevent burning.

1/2 c. teriyaki or soy sauce
3 tbsp. sugar
1 tbsp. vinegar
2 tsp. ground cumin
1/8-1/4 tsp. cayenne pepper
2 cloves garlic, minced
1 lb. cubed pork
2 tbsp. peanut butter
1/2 c. water

Mix first 6 ingredients, pour over meat cubes and marinate 1/2 hour or more. Put cubes on skewers and grill or broil until done. While grilling, mix the leftover marinade with water and peanut butter; cook a couple of minutes. Serve sauce with meat as a dip. Serve satay over cooked rice
