For the regular 11x15x2-inch pan, use 2 cake mixes.
For the 12x18x2-inch pan, I use 3 cake mixes. http://www.baking911.com/cakes/mixes.htm
Call the telephone number on the cake box and ask customer service...I've called for recipe conversions before, they are very helpful.

2 would fit just fine unless the pan is more than 2" tall and then you would need to add 1 more box.
