It used to be believed that all of your bodily fluids/body parts balanced and regulated different aspects of mood. These moods were called "humors". They were sanguine (sort of happy and lustful), melancholic (sad), cholic (angry), and phlem (calm). Any excess of one fluid would cause severe moods.
"Yellow bile" (urine and other acidic body fluids) was connected to the cholic humor, so, someone who was easily angered and feisty was believed to be "full of piss and vinegar".

RE:
where does the term "full of pith and vinegar" come from?

The term "Pith and Vinegar" has been bastardized recently on the internet. It is most often incorrectly referred to as "piss and vinegar". The actual term "Pith" has in antiquity referred to as "strength", "inner strength" or "fortitude" as in the old term "Men of Pith" The incorrect usage comes from people rationalizing the use of piss and vinegar to mean such things as "when you are full of piss you are full of fight" which is ridiculous. Like so many terms that "catch on" on the internet with often improper meanings, it is the case in "pith and vinegar"

For me, it's Shawn Michaels. But, anyway Chris Jericho's one of them and a honorable mention. There's nobody else have everything like Shawn Michaels. Considered by his peers such as Triple H, Ric Flair, Kevin Nash and even Chris Jericho himself as the greatest wrestler alive. Usually wrestlers have few weaknesses, but HBK has "NONE". He has it all : Wrestling skills, gimmick, charisma, showmanship, mic skills, the ability to make your opponent look GREAT in the ring and on the mic, drawing power (attracting fans to buy tickets to see you), quality of opponents, ring psychology, being able to tell a story in the ring, making everything look believable. There's no doubt in my mind that Shawn Michaels's truly the "TOTAL PACKAGE" of Pro Wrestling. There's also no doubt in my mind that Shawn Michaels's the true "Wrestling God". As you can see, Shawn Michaels won Match Of The Year 10 times. Also, he can put on classic matches against different opponents : technical such as Bret Hart and Kurt Angle, brawlers such as Steve Austin and The Undertaker, hardcore such as Mick Foley, giants such as Sycho Sid and Diesel. Shawn had classic matches with all of them. Shawn can also put on great matches in almost every speciality matches : Ladder, IronMan, Hell In A Cell, Elimination Chamber, etc. And while you say Chris Jericho's a great heel, I agree. But a great face, I disagree. Chris Jericho as a babyface is a bit boring IMO. He's far better as heel. On the other hand, Shawn's pretty good playing both face and heel. Look how much heat he got in Canada. IMO, Shawn is a better heel than Y2J and draws more heat. HBK can also told the story in the ring better than anyone else. His entrance and theme music is also better than Y2J IMO. And about his accomplishment, HBK's the first ever Grand Slam Champion and the innovator of so many matches. He's also ranked by WWE at No 1 in their 50 Greatest Superstars. While most of the lists are controversial, nobody disagree with HBK as No 1. He's only a 4 time World Champion, but that's coz he's too good to be World Champ. He doesn't need it to tell a good story and put on classic matches. So, in my opinion, it's Shawn Michaels. There's nobody like him, the greatest performer of all time. The only performer who can match Shawn are only Bret Hart and Chris Benoit. But, both Bret and Benoit lacks of mic skill and charisma, so the true Total Package is none other than that man, Shawn Michaels. BQ : Agree. He has better matches during 2007-2010 and he was a better heel that period.

I was riding in a taxicab this morning and there was a female dispatcher on the two-way radio. She was dispatching the cabs to various addresses and the usual dispatch chatter was going on. Suddenly, the dispatcher asked? ... Michael Hunt, are you out there... Mike? Do you read me? ... Mike Hunt, Mike Hunt... Come in, ... Come In... Come in Mike Hunt. I don't know why this seems so funny to me- it was just a cab ride.

I couldn't stop laughing. I think something shot out of my nose!

Actually, the phrase is "full of piss and vinegar". It basically means "Rowdy, boisterous, full of youthful energy." Below is the website where I looked this up...
