It means take the pan off the flame pour in the cognac into the pan and tilt toword flame to ignite the cognac and burn off the alcohol. it only keeps the flavor behind.

You are adding the cognac to the pan, then burning all the alcohol out of it.
You've probably seen this before on a cooking show where the chef tilts the pan, the liquid runs over onto the burner and a huge flame jumps up...you don't need to do it that way, it's for show.
Here's the easy way:

You PRE-MEASURE your cognac in another container.
NEVER pour directly from the bottle.
Take the pan off the heat, add the cognac.
Take a kitchen lighter or long-handled lighter and ignite.
It should burn for just a few seconds.
Place back on burner.

the method is called Flambe, you add the alcohol to the recipe but you just want the flavor and not the alcohol, so you remove the food from the heat so it will slow down the cooking process, the food should be pretty much cooked before you add the alcohol anyways, and then you add the cognac and flame it off so you are left with a light flavor from the cognac and none of the overpowering flavor of the alcohol.

You are getting the cognac taste in the food, but you are burning off the alcohol so you don't get drunk from the sauce.

u pick up the pan, pour the cognac and turn the flame off...That's what I'm thinking

It means to let it burn off. If you cook on gas. Pour cognac over and alkohol + fat in pan will catch fire from gas - or match, and you let it burn off.
