MARZIPAN:
2 cups of confectioners sugar
½ pound of finely ground blanched almonds (or prepared almond paste as directed on box)
2 egg whites
½ teaspoon of salt
½ teaspoon of almond extract
Blend all of the ingredients together until smooth and completely blended together.
Wrap or cover tightly and chill until firm.
Note…Color marzipan decorations as needed, pinch off a little at a time, color and blend before using.
Marzipan can be colored with food coloring gel or paste while it is in dough form or rolled out flat and shaped using cookie cutters and then painted with food coloring gel, paste or powder using an artist-type paintbrush or sponge.
To paint on food coloring allow the Marzipan shapes to dry for approximately 2-hours to prevent the food coloring from running into unwanted areas.

When mixing food coloring into the dough…use one drop at a time as 1-drop of food coloring may well be all you need…better not enough than too much.
Cocoa powder works great for producing the color brown.
Allow the Marzipan 24-hours to dry thoroughly.

Cloves can be used for stems top or bottom on fruit shapes.
Toothpicks can be used to make creases, dimples or designs.
Roll dough gently against a hand-held grater for special effects.
Roll, stretch, pull, pinch or use cookie cutters for particular shapes or figurines

Marzipan or Almond paste is really easy to make, and the homemade version is much softer and easier to work with than the bought packs - go for it!

225g/8oz icing sugar
225g/8oz caster sugar
450g/1lb ground almonds
2 eggs, beaten lightly
1 lemon, juice only

Sift icing sugar into a bowl and add castor sugar and ground almonds. Add the rest of the ingredients and mix to a stiff paste. Knead until smooth, keep in plastic bag until you need it, or it will start to harden.

If when you are rolling it out it starts to stick, shake a little icing sugar onto the surface and onto the rolling pin.

I found this recipe at recipezaar.com, they have many others, but i have tried this one and it's great!

It makes two cups:

1 cup blanched whole almonds or 1 1/3 cups slivered almonds
1 1/3 cups confectioners' sugar
1/2 teaspoon almond extract
2 teaspoons water
2 1/4 cups confectioners' sugar
1 slightly beaten egg white

1-Place almonds in a blender container or food processor bowl Cover and blend or process until ground.

2-In a mixer bowl combine the ground almonds, the 1 1/3 cups confectioners' sugar, almond extract and 2 tablespoons water Beat with electric mixer until the mixture forms a ball.

3-Gradually add the 2 1/4 cups confectioners' sugar, beating until combined.

4-Stir in enough egg white (about 1 tablespoon) to form a clay-like mixture.

5-Tint with food coloring, if desired.

6-Mold or shape the marzipan as desired, using about 2 teaspoons marzipan for each shape.

It's Marzipan and a lot of stores now carry it pre made in the baking isle. It is a paste made from crushed almonds. I have never made it homemede because you will have to crush the almonds to a powder almost.
