I've been using avocados for guacamole and as sushi filling, but really would like to make some salad with it. Thank you for your recipes!

I kinda make this version of a chicken cajun cobb salad. I love avocado also. It is great in salad.
2 chicken breasts that I cook in non stick skillet and I sprinkle plenty of cajun seasoning on both sides.
I bag of Romaine or better yet spring greens. (I never use plain iceberg lettuce.)
1 tomato diced up
a few thin slices of red onion (I use most of an onion)
1 avocado or even 2
1 cup of cheddar cheese ( I use sharp cheddar)
Croutons ( I make my own by grilling crusty bread with butter and cajun seasoning on both sides and let sit a few minutes)
Put your greens on a platter and start putting your other ingredients in rows on top of the greens. I like either a fresh made ranch (I make the buttermilk version of Hidden Valley only)
or a good poppyseed dressing. A red french would work ok too.
This will serve a few people and it tastes great.

Corn, Avocado, and Tomato Salad Recipe courtesy Paula Deen

Recipe Summary

2 cups cooked corn, fresh or frozen
1 avocado, cut into 1/2-inch cubes
1 pint cherry tomatoes, halved
1/2 cup finely diced red onion

Dressing:
2 tablespoons olive oil
1/2 teaspoon grated lime zest
1 tablespoon fresh lime juice
1/4 cup chopped cilantro
1/4 teaspoon salt
1/4 teaspoon pepper

Combine the corn, avocado, tomatoes and onion in a large glass bowl. Mix together the dressing ingredients in another bowl, pour over the salad, and gently toss to mix.

2 avocados
romaine lettuce leaves
1 teaspoon salt
1/2 teaspoon white pepper
1/2 teaspoon dried oregano
1 clove garlic -- minced
1 sprig fresh thyme -- (optional)
2/3 cup olive oil
1 tablespoon red wine
1 tablespoon vinegar

Cut the avocados in half and discard the pit. Scoop out the avocado meat with an ice cream dipper, and shape into little balls. Place them on two plates lined with lettuce leaves. In a small bowl, whisk together the rest of the ingredients, pour over the avocados, and serve.

2 avocados - peeled, pitted and diced
1 sweet onion, chopped
1 green bell pepper, chopped
1 large ripe tomato, chopped
1/4 cup chopped fresh cilantro
1/2 lime, juiced
salt and pepper to taste

In a medium bowl, combine avocados, onion, bell pepper, tomato, cilantro and lime juice. Gently toss until evenly coated. Season with salt and pepper.

Try Making an Avocado Smoothie! Simply blend together avocado, full cream milk and sugar to taste with a couple of ice cubes. Two avocados in a cup of milk and a couple of tablespoons of sugar and a few ice cubes should be just right. For an even richer smoothie, you could add cream or vanilla ice-cream into the blender. Drink right away or freeze for later use.

I am particularly fond of avocados and grapefruit.
1.A ripe avocado
2.One large grapefruit(red ruby if you can find them)
3.A cup of baby spinach
After removing the avocado from it's skin,slice it into equal sections.remove the sections of grapefruit,ensuring that there is only the fleshy part and no skin or pith.On a plate lay one slice of grapefruit,one slice of avocado and one piece of spinach,continue to do this until you have made either a circle or a crescent pattern on the plate.
VINAIGRETTE
1.Raspberry juice or vinegar(about three tablespoons)
2.Walnut oil or extra virgin olive oil(about half a cup)
3.Salt and pepper to taste.
mix these ingredients together and pour over salad.

MEXICAN COLE SLAW
1 avocado, ripe, peeled and diced
1/2 bunch cilantro, finely diced
1 large tomato diced
1/2 cabbage, sliced and diced
1/4 c diced celery
1/2 brown onion, diced
1 fresh jalapeno, seeds removed then diced
Mayo
salt/pepper to taste

In a large bowl - Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.
Add the avocado then 2 -3 tbsp of mayo or just enough to moisten to your taste. Mix well. Chill for 1 hour and serve cold

I love avocados. I have a few ideas that are always a success with my family and friends.
1. Cut the avocado in half. Remove the seed. Remove any large black spots with a small knife. Fill the hole with your favorite Italian bottled dressing. Sprinkle with freshly shredded parmesan cheese. Put on a saucer and serve. The dressing and the avocado are awesome together.

2. Put a mixture of spring greens into a salad bowl. Add your favorite vegies...tomatoes, onions, zucchini or yellow squash, carrots, celery, radish...whatever you like. Add salt and pepper as desired. Cut and clean an avocado. Cut the avocado into bite size pieces. In a small bowl, pour enough Ranch salad dressing. Add the avocado to the dressing and mix thoroughly. This dressing is great with blue cheese dressing also. My family loves the dressing so much, we have it with fish, chicken and even as a pizza dip.

3. While not a salad, this is one of my son's favorite side dishes. Bake a standard white potato and instead of loading it with sour cream and butter, we like to use fresh slices of avocado and chives. I just clean and slice the avocado into small wedges. In place of the butter, we add the avocado and season it with chives, hot red pepper flakes, or even sauteed garlic.

4. Last but not least, our favorite party snack. This makes a unique spread for crackers, pita bread and chips. Cut and clean 3 avocados. Mash the meat in a small bowl and stir in a few drops of lemon juice. In another small dish, cream together 8 ounces of cream cheese with an envelope of powdered taco seasoning. On a serving dish or bowl, layer the avocado. Top with finely grated cheddar cheese. Top the cheese with your cream cheese mixture. Add a layer of finely chopped black olives. Serve with small knives or spoons for spreading. I usually put a small bowl of jalapenos and salsa on the side for those that want more spice.

Note, you can substitute cooked shrimp for the lobster.

LOBSTER, AVOCADO, AND GRAPEFRUIT SALAD

If you don't want to cook a live lobster for this recipe, buy 2/3 pound cooked lobster meat from your seafood shop.
Active time: 45 min Start to finish: 2 3/4 hr (includes chilling)

1 (1 1/4- to 1 1/2-lb) live lobster
2 teaspoons finely chopped shallot
1 tablespoon fresh lemon juice
1/4 teaspoon table salt
2 tablespoons extra-virgin olive oil
1 pink or ruby-red grapefruit
1 firm-ripe California avocado
1 oz baby arugula (2 cups)
Coarse sea salt to taste (optional)

Plunge lobster headfirst into an 8-quart pot of boiling salted water. Cook, covered, over high heat 6 minutes (for 1 1/4-lb lobster) or 7 minutes (for 1 1/2-lb lobster) from time it enters water. Transfer with tongs to sink to drain.

When lobster is cool enough to handle, remove meat from tail and claws, keeping meat intact. Discard tomalley, any roe, and shells. Chill lobster, covered, until cold, at least 1 hour.

While lobster chills, stir together shallot, lemon juice, and table salt in a small bowl and let stand at room temperature 30 minutes. Add oil in a stream, whisking.

Cut peel, including all white pith, from grapefruit with a sharp knife. Cut segments free from membranes and transfer segments to paper towels to drain.

Halve avocado lengthwise, discarding pit. (Save 1 half, wrapped tightly in plastic wrap, for another use.) Halve remaining avocado half lengthwise and peel, then cut crosswise into 1/3-inch-thick slices.

Cut lobster tail meat crosswise into 1/2-inch-thick slices. Divide avocado and all of lobster meat between 2 salad plates and arrange grapefruit around them. Top with arugula and drizzle with dressing. Sprinkle lightly with sea salt (if using) and serve immediately.

I threw this together one time when it was all I had in the house to eat. Now I make it all the time. I have 5 avacado trees in my yard.

tomato onion and avocado salad with a little oil, vinegar and salt is my absolute fav salad...its delicious.
