it's so hot and i dont feel like cooking.
Anyone got any good cool meal ideas please instead of salad?

Try this, its still salad bases but yummy!


FENNEL AND ORANGE SALAD -


2 large oranges
1 bulb fennel
1 small onion (preferably red)
50 g rocket leaves

Dressing:

15 g pitted black olives
1 sun dried tomato in oil, drained
1 small clove garlic, peeled and crushed
1/2 tablespoon chopped fresh parsley
6 tablespoons olive oil
2 teaspoons balsamic vinegar

Make the dressing first. Roughly chop the olives and the sun-dried tomato. Place in a food processor with the garlic, parsley and 1 tablepooon of the oil. Blend to a fairly smooth paste. Transfer to a bowl and whisk the remaining oil, vinegar and seasoning to taste. Peel the oranges, removing the white pith. Cut into segments between the membranes- do this over a bowl to catch the juices to add to the dressing. Place the segments in a large bowl. Discard the tough outer layer of the fennel, then slice very thinly. Finely slice the onion. Toss the fennel, onion and rocket leave together with the oranges. Pour over the dressing, toss again until everything is evenly coated. Serve immediately.

Mexican Shrimp cocktail.. perfect for hot days!

Ingredients:
2 lb shrimp, cooked, peeled and deveined. Chilled.
4 med tomatoes, diced
1 bu cilantro, finely chopped
1 fresh jalapeno, diced
2 cloves garlic, crushed
1 onion, diced
1 large avocado, diced.
1 large bottle ketchup
1 jar cocktail sauce, hot or mild
hotsauce, like tabasco or tapatio
6-8 lemons
saltine crackers

In a bowl, add shrimp and squeeze lemon juice from 1 or 2 lemons on it. Put back in fridge.

In a large stock pot, add 4 cups cold water.
Add the entire bottle of ketchup, cocktail sauce, cilantro, jalapeno, garlic, onion, tomatoes. Stir content until completely mixed.

Squeeze 4 lemons into the mix. Add hot sauce to the mix according to taste. If you like it hot, add 6-10 tsp. If you want it mild, add a 3-4 shakes (approx 2 tsp).

In a bowl, Add the tomato mixture into the mug then add a serving of the chilled shrimp and serving of avocado. Serve chilled and with crackers.

To make the cocktail hotter, add more hot sauce.
To make tangier, add more lemon juice and ketchup.

You can cook most anything, but you must do it early in the morning before it gets hot outside.Serve it later. Stay away from anything that makes Steam- like rice.

Use the Crock Pot for roast, Home made soups- little heat produced.

Pasta..you can get all different types and flavours from the deli in Asda.

Jacket potato's you just chuck in the oven and then fill with cold refreshing fillings, such as tuna,sweetcorn and mayo.. Cheese and onion filler, egg mayo, etc

In this weather my kids live on sandwiches, lots of fruit, yogurts and the above, (Their choice before someone decides to comment)

i love chicken and pineapple rice,yum! fry 500g chicken strips ,while cooking chicken cook 2 large cups of white rice,once rice is cooked add to the chicken pan,add 2 cloves garlic,small packet unsalted cashew nuts,small can pineapple rings cut inito centimetre peices,4 tablespoons dark soy and 3 tablespoons sesame oil,or according to taste,garnish with spring onions,delicious!this amount will serve about 4-5.it's great hot but you can make it when you feel like it and keep it in the fridge for up to 3 days,it's good cold too.

California wraps with crab, mayo, avocado, lemon, a sprig of parsley, a bit of lettuce, a bit of cheddar, salt, pepper, etc. You can have iced tea with mint and a slice of lime and pink grapefruit in it, and everything will suddenly look brighter in spite of the heat.

Rice - there's a lot you can do with it! Those Uncle Ben rice packs are great, you can do a quick bit of stir-fry pork or chicken to go with it if you're sick of salad.

Mexican veggie wraps

Slice or cut up tomatoes, onions, bell peppers and avocado and roll it up in a wrap. Before you wrap it, add your favorite salsa (drained) as a condiment and for moisture.
