As for purchased mayo, not a worry. They irradiate the eggs to kill the bacteria before they ever crack the shells.

Anything that contains raw egg has the potential to cause Illnesses such as those caused by salmonella. When commercially produced, mayo is made with pasteurised egg. As an additional safeguard this is dehydrated, thus reducing the potential for bacterial growth further. When reconstituted (when water is re - added) pateurised egg again joins the "high risk" group of foods (similar to dried milk) and will require refrigerated storage (covered and on the top shelf) and protection.

It is indeed pastuerised, so no you cannot get salmonela. You can catch it from home-made mayonaise, hence most maternity books tell pregnant women to avoid home-made only.

if its fresh mayo that you make yourself then absolutely, if shop bought mayo like helmans (because it doesn`t contain raw egg) then it lasts 3 months once opened put in the fridge.

Mayo is one of the worst. but is good to use for alot of things but you really have tobe careful.,especially in the hot summer. . Can't keep unrefrigated to long. Pem
