Dehydrated water would reduce the weight and shipping cost of a key input. Needless to say, in an environment of higher energy prices, every little bit (or technology) that reduces the weight carried helps the bottom line of soft drink manufacturers.

You can't dehydrate water; the dehydration process removes all water from food. If you dehydrated water there would be nothing at all to sell.
