mix a little oil with some mustard and some thyme, brush it onto the skin, now sprinkle it little salt on it to crisp it up, a little pepper, you can put some onion and lemon inside it if you want or stuffing or smoked bacon on the skin, now cook it, checking it once in a while and pouring the juices back over it.

it has to be an oakham chicken from marks & spencer. first wash the chicken under running water and use a lighter over the skin to make sure all the hairs are burnt off.

Then for the stuffing... break up fresh bread, add some chopped onion and chopped chicken liver ( not a lot of liver ). season with salt, pepper and chicken spice. stuff the chicken.

place all in a roasting dish and brush some olive oil over the top of the chicken and rub in the chicken spice over the skin. cover with foil and roast in the oven. follow th e instructions on the packet and dont forget to cook longer if you have stuffed it.

this is the best roast chicken... try it... I bet you`ll LOVE it!!! Good luck

I use the coke can effect, you can buy this in many stores, but the best one has a drip pan under to catch the fat. Make sure the chicken is clean, then put it on the can. Cover the outside with Montreal Steak Spice and roast it in the oven or on the BBQ at 350 degrees.

the best way is to buy self basting roasting tin like they used to use and buy a free range chicken and cook it not to fast or to high a heat or it will dry out put on lowest shelf in oven is best and about 10 minutes before you are due to dish it up take lid of put back in oven so the skin will crisp up on the top have a clucking good chicken

Wash inside of chicken with cold water and remove any giblets inside. Use a generaous amount of good quality olive oil and fresh herbs, such as sage, a little tarragon, lemon wedges and whole cloves of garlic, scattered all around the roasting dish and lemon wedges and garlic inside to keep moist and for the flavour to permeate. Roast for half the cooking time with foil on, then remove foil to darken and crisp the skin, thats only for appearance really as I give the dog the cooled skin as I hate it!

the easiest way to roast the whole chicken is:.....put in a pan or whatever 1, 5 cm of salt and then put the chicken on it and just put all together in the oven on 170 grades Celsius.....it becomes crunchier and yaaammmmmiiiieeee

this is the quickest way ever.
put your chicken after having cleaned it in a pot add your seasoning and close the lid.
then when the chicken starts sizzling add a cup of water to it you will see how the heat and the water incorporates a delicious crispy and oh so tasty chicken dish,
