Normally, we think of the stars as an entity, and therefore one would most often say, "the stars", in the same way we say "the sky". We tend to use both of these words as uncountables
(i.e., considering them by their mass--like coffee, instead of something we can number like cups).

When I hear "You can see stars from here" I think of the time I fell off my bike as child, conked my head on the gravel, and literally saw stars.

It would be very unusual to say just "stars" in the sentence you have given. If you could see only a few, you would probably use "a few" or "some" as a qualifier.

Or you might be talking about Hollywood celebrities.

Whenever you use a word out of it's usual sense you need to have a really good reason for it. On the face of it, "the stars" would be correct usage here.

Both are correct. We refer to stars and "the stars" as the same thing in different ways. It depends to some extent on context. The second one might be more specific, but they are both ok.

You can say, looking out of your window:
"I can see trees from here" In other words you can see trees somewhere in the view.
"I can see the trees from here" referring to a particular group of trees.

Both are ok, but one is best. Two would imply that you can see all the stars from here, which is not possible.

Both are correct but it depends on what context. The second one is probably correct more often than not.
