that first one sounds good, but my mom used to peel and slice, and add to a pan with a small amount of water and butter, and simmer until the water is gone, and they begin to brown in the butter. By the time they get brown, they are nice and soft and sweet. But I've also tossed them with olive oil and salt and pepper and roasted them in the oven, if you have the oven on for your meat. Makes your life easier.

The absolute best way is to slice them thinly, then fry in butter until they turn golden and soft. A few brown or black spots is OK. Absolutely heavenly!

First parboil, then bake with a little butter, salt and pepper..
OR
Boil in salted water with carrots then mash together add fresh butter to the mash.

Various ways are good. You can peel them and cook them like chips (fries!) or boil or steam them and mash them with butter. We like to mash them with carrots and butter
