You sure can, but you need to make arrangements with the airline.
Are you free to travel over land from Italy to Austria? Unless you have a EU passport, you will need a "Schengen visa".

Cal the airline that issued the ticket. In most cases the answer is no. If you paid for a ticket from Bologna to Mumbai you are expected to check in for your flights in Bologna. When you do not, your reservation on the Vienna-Mumbai flight will be cancelled. It may be possible to cancel the Bologna-Vienna flight, but it depends on the fare and you may have to pay penalties. If you have your ticket, or the recept if it is an e-ticket, there will be what is called a fare calculation line somewhere which will tell you if the fare is calculated from origin to destination or from point-to-point. It will start with the letter BLQ - if you post it here I will be able to tell you what kind of fare you have.

I doubt it. At least in the United States (or on US Flag Carriers), a reservation is automatically cancelled if the passenger does not board at the start point off his/her ticketed flight. This includes the return flight as well, if one was booked on the same reservation.

You will have to revise the ticket with the airline since this is an international flight and there are security issues here. The answer is no.

No, and the airline will usually cancel the remainder of your itinerary when you fail to show for the first segment. The ticket you bought must include all segments.
