Many mothers are still very much attached to their male children even after they've reached adulthood. As strange as it sounds, some are simply not able to accept the reality that they are no longer the #1 woman in their son's life. Because of this, they do at times find it difficult to embrace the "new woman" who eventually receives their child's love and affection.
Don't worry. Give it time. If she really loves him and is willing to acknowledge his love for you, soon she'll come to accept your relationship :)

There could be any number of reasons, to be honest. But the most likely is that she sees a reason that you are not the right woman for her son. Now - whether or not that is true, I can't say for sure.
Your fiance/boyfriend needs to sit down with his mother and really understand what her objections are. If she doesn't have any real reasons, maybe she is just having a tough time letting go of him. With time she'll probably come to see that even though she is not the only woman in his life, he still loves her just as much as he ever did and she'll always be important to him.
I think that it's important to understand that it's likely that she's just trying to do what is best for her son. He needs to tell her though that he is the best judge of what is best in his life. He sees you in a way that she doesn't, and once she understands that hopefully she will back off and let you be married in peace.

All mothers are afraid of loosing their sons. I married a man who's mother cried {sadly} when he told her we were engaged even though she was ok when we were dating. Try to not let it bother you, it is NOT a reflection on you it is her issue to deal with just do not put your man in the middle.
