I know that you can't refreeze anything that has already been frozen, but is it okay if it gets defrosted, cooked then frozen as something else? E.g. stock/soup made from frozen chicken

Yes my "Big Mama" (grandmother) did it all the time. And my mom does the same thing it's completely safe. However, don't keep it frozen for to long it can have a freezer life of about a month to two months but no more than that.

Absolutely.

The trick is to make sure you don't let something sit out to cool before you freeze it. That goes for pretty much all left overs. Get 'em cool and in some kind of air tight container fairly quickly, then into the freezer/fridge!

One easy way is to use some kind of plastic ware, fill it up (and make sure it's sealed!) then put it in a sink with icewater. Cools it right down & then you can fridge or freeze easily...less bacteria this way.

i would suggest, instead of again putting it in the fridge, use your imagination, and utilise the left-over stock, in cooking some thing else. for example, you can make a rice receipe with that stock.
soak i cup of long grain basmati rice, for 20 minutes,
cut 1 big onion, 2 green chilies, and chop ginger- garlic finely.
make some tomato puree,
steam green peas half cup, 1 medium size potato, and 1 carrot, some cauliflower,
in a pan , stir fry onion, ginger garlic, chillies, add some turmeric powder, red chilli powder, garam masala, tomato puree, and vegetables, in that order,
add the rice, drained after 20 minutes, and turn with all the ingredients,
pour the stock which you have, making it boiling hot, on the other stove,
mix well, let cook under medium fire, covered with lid, after the stock gets reduced, while cooking, and won't overflow the lid.
garnish with coriander and serve hot.
this way, you will avoid refridgeration of already cooked items, losing its flavour, also not advisable.

Yes cooking kills almost all bacteria so if you cook it and than freeze it in the nest hour or two your ok. if you feel insecure cook it to boiling let cool still COVERED then heat to boiling again, then repeat it again . this is called Tindellization and was just behind Pasture's pastureization process but works on soups a stews great

Done it many times with no problem. Obviously, freeze it soon after cooking and make sure it's well wrapped and it should last a long time and come out just about as good as when you cooked it.
