My first impression when I read your question was that it was a trick question. But now I wonder whether you have ever tasted sour cream. It is different from sweet cream in that it is thicker in the container and has a slightly tangy flavor to it. That is why it is called "Sour" cream. It's not because it has turned sour. I think they add some lactibacillus to the cream -- that's some good bacteria -- which sours and thickens it. And listen to all the others answerers to your question. Stay AWAY from sour cream after the expiration date. NO, it does not go good again. It goes BAAAAADDD. It smells bad. It tastes bad and it will make you feel bad if you eat it.

It will go bad. You have some time after the expiration date though. You can tell if it's bad by the smell; it will have a specially funky aroma. Sour cream is not bad cream, it's cream with lactic acid added, which while keeping it fresh and tangy for longer than normal cream, the acid can't hold bacteria back forever.

Let me tell you a story.
This one time my friend sean wanted a snack so he went to his fridge and grabed a thing of sour cream and some tortilla chips. he wasnt paying attention and so he started eating while he wached TV. he looked down after eating a few chips to find his sour cream was blue and green.
Becuse of the acid in sour cream (among other things) it grows exsecive amounts of mold very quickly when it expires.

I've heard that (sometimes) It's (sometimes) safe to eat stuff a week after the expiration date. Basically, I just throw it away when it hits the expiration date.

via micro organism used to produce the sourcream !! .. they dont enable the milk until eventually it expires and then make the sourcream ! they upload and combine and do various artwork to get this sourcream so ultimately it is going to expire like numerous different diary products
