It's all about what was domesticated in that area first. In Europe, goats were easily domesticated, cheap to feed, low maintenence, and were easy to breed, so it became the norm for awhile.
Cows are a domesticated worldwide, but more expensive to care for, so they are raised by richer cultures.
The reason we don't drink milk from other mammals is not that hard if you think about it. Money. It's not worth the risk to do it, cows and goats along with a select few other animals are able to produce milk in large quantities, and for longer than needed to sustain a baby, thus easy mass marketing and product.
Something like a porcupine wouldn't be easy to feed, and I doubt it would provide gallons of extra milk. It just wouldn't be worth it.
I mean, if you're going along those lines of thinking, why not human breast milk?
The answer becuse to normal society, it would seem similar to canabalism. Not acceptable, but it doesn't mean that it isn't happening somewhere.
It's just one of those questions that will float out of nowhere and bother you. Not a big deal at all.

Would you like to be the one to milk a porcupine or a bear? Also, milk from a cow has many nutrients and has a longer shelf life compared to goat or other mammal milk.

Because the are docile, slow, produces mass quantities of milk, the udders are easy to find and they will let us.
If you tried to milk a bear it would kill you and a porcupine would quill you and even if you got past that you would have to find where to milk it at and because of its size, I doubt could produce very much. I have never heard of anyone trying to do that, but imagine if you would submit the idea to "Jackass" that Johnny Knoxville might try it.

I think cows are just very domestic animals that are easy to utilize for milk production.
Goat milk isn't bad, btw, especially goat milk yogurt.
