My secret is to DREDGE the sugar and combined dry seasonings into the shredded/chopped cabbage before adding any liquids. After about 10 minutes, add mixture of vinegar and oil combined. Stir in mayonnaise and whatever......
I use this base dressing/mixture with macaroni salad also. (additional spices will depend on your discretion, I can't always add celery seeds or spicy seasonings because of guests health conditions, etc.)
Combine Together:
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon pepper
dash paprika
Combine Together:
1 teaspoon vinegar
1/4 cup oil
Then add mayonnaise to taste

I am going to assume you at least perfected shredding the cabbage. Also shred some carrots and mix with the cabbage. For the slaw dressing, this is what I do. I never measure, so I will do my best. Take 2 cups mayo( Miracle Whip), about 1/2 cup milk, 1/4 cup sugar and one good squirt of mustard. Mix well with a wisp. Taste it...from there you can judge weather in needs more of anything. Some people also add a little salt and pepper...I don't. Good luck!

fine chopping of the vegetable, with mine i keep it simple, cabbage, carrots, tad of onion and a touch of celery or a pinch of celery root even. 4 the dressing, u can u use out of a bottle but i make my own, also very simple, quarter cup of olive oil, 3 tablespoons of vinegar and 2 tablespoons of sugar, some salt and pepper and shake it up and add as much as u feel u need or 4 creamy coleslaw i just buy my favorite coleslaw dressing (Kraft) and add a few tablespoons of miracle whip 2 thicken it a bit more and add what i think i need.

The secret is the avocado!
MEXICAN CABBAGE SALAD
1 cabbage, finely sliced
1 avocado, ripe, peeled and diced
1/2 bunch cilantro, finely diced
1/4 c diced celery
1/2 brown onion, diced
1 fresh jalapeno, seeds removed then diced
Mayo
salt/pepper to taste
In a large bowl - Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.
Add the avocado then 2 -3 tbsp of mayo or just enough to moisten to your taste. Mix well.
Chill for 1 hour and serve cold

Currently Hidden valley makes a kick BUTT cole slaw dressing, buy the pre sliced mixed red and green cabbage with carrots add ground black pepper to taste and a healthy amount of caraway seeds, Yummy! It is fresh and tastes "homemade" after all the ingredients "sit" for 2-8 hours. The caraway seed makes the difference

I cheat and use Litehouse Cole Slaw Dressing. It tastes soooooo good. But the best-tasting legitimate coleslaw dressing I've made used just mayonaise and lemon juice, a little salt and pepper. I've added curry powder before and it was ok, but not my favorite.

yeah, its vinegar, mayonnaise, etc., but I found a much easier method, they now sell an EXCELLENT Coleslaw Salad Dressing at your local Super Market. I think its made by Hidden Valley and its great, almost as good as Kentucky Fried Chickens.

I was going to tell you use half green cabbage/half red, then add carrots, capsicum and red onions. Then use the cheapest home brand coleslaw dressing you can find. It works for me.

Look for the TV show "Good Eats" They did an episode called "The long arm of the slaw" (Season 6, Episode 13) which not only tells you how to do it, it tells you WHY you need to do things, and shows you all the methods you need.
(Don't worry if it looks like a TV show called "Rise and shine". He's pretending to be on a morning show)

If it is the dressing, I don't measure but it isn't hard. In a bowl put mayo then add a little vinegar and sugar and milk alittle at a time. It thickens up and then add your slaw mix. My husband loves it. Taste to your likeness. Goodluck !!!
