You are right! There is only one way and that mediator (intercessor) is Jesus Christ, who indeed is God's son! There are no saints in the Bible. All saints were issued by religions that do not follow the true Word. Jesus Christ was the only one that was perfect and He was the only one that died on the cross to pay for our sins. This sacrifice gives us salvation if we simply believe!

There is one and only one intercessor between God and man, The Lord Jesus Christ, so you have that right. But if you read closely, the saints are the believers. The Roman Catholic church has made sainthood into something its was not intended to be. Man has no authority to proclaim anyone a saint, that right belongs to our sovereign God.

You are right about there being only one way to the Father and that is through the Son. All that means, however, is that the only way to SALVATION is through the Son who is Jesus. Intercession of the Saints simply means that we are asking them to pray WITH us. Anyone can be an intercessor like when you ask your Friends and relatives to pray for some intention you are praying for, their prayers for your requested intentions become intercessory prayers. The same goes for when we ask anyone in Heaven to pray as an intercessor for our intentions.

Even when we ask others -- such as Mary, the saints, and people here on earth -- to pray and intercede for us, it is entirely dependent on Christ's intercession before the Father.
Christ is the intercessor between the Father and us. But He can exercise His role as intercessor any way He wishes -- and that includes allowing (and even requiring) others to join in on His intercessory work.
The Bible is clear that we are all part of the Mystical Body of Christ. When we take part in Christ's intercessory work, we are performing our function and duty as part of His Body.

Because men wrote the Bible and men portray themselves as intercessors for power. Because it's up to you to know God for yourself.

1 John 5:16 If anyone sees his brother sin a sin not to death, he shall ask, and He shall give him life for those that do not sin to death. There is a sin to death, I do not say that he shall pray for it.
James 5:14 Is any sick among you? Let him call for the elders of the church, and let them pray over him, anointing him with oil in the name of the Lord. 15 And the prayer of faith will cure the sick, and the Lord shall raise him up. And if he has committed sins, it will be forgiven him. 16 Confess faults to one another, and pray for one another, that you may be healed. The effectual fervent prayer of a righteous one avails much.

Your statement is not very clear, just like your faith. Learn to meditate, then maybe you will find out what everyone else already knows.
