Cajun Oven Fries
4 medium, thin, skinned potatoes
3-4 tbs olive oil
2 tbs cayenne pepper sauce
1 teas thyme
1 teas paprika
1 teas cumin
salt and pepper

Preheat oven to 450. Cut potatoes into wedges. In a bowl, combine oil, hot sauce, thyme, paprika, and cumin. Toss potatoes with dressing. Spread in a single layer on a non-stick cookie sheet. Season with salt and pepper. Cook 20 minutes. Turn once

Or, you could just chop up some potatoes and toss with olive oil, season with salt and pepper (or any other seasonings u like)

8 Idaho potatoes, peeled
1/2 gallon peanut oil, neutral flavor, for frying (I use Kanola Oil)
Salt to taste



Peel (or leave the skins on) and cut your potatoes into the size of fry you want. Heat a saucepan or stock pot (at least 2 gallon capacity) with the oil about 250 degrees (use a thermometer to gauge) or use a french frier and set to this temperature. Add the french fries and cook, stirring to avoid clumping together, about 3 minutes, until soft but not mushy. Remove with a mesh strainer and drain onto paper towels. Turn heat to high and heat oil to 350 degrees. At the last minute before serving plunge the fries into the oil and cook until golden brown. Remove from oil, drain onto towels and season with salt to taste. It is important that you fry them twice. Once will first cook the potatoe the second time then crisps the outside. If you only fry once they will either not be crispy or they will be raw inside.

Or if you don't like frying then you can line the cut fries onto a foil lined cookie sheet, brush them or spray them with butter/margarine/etc. Sprinkle with salt (sometimes I will use a flavored salt, garlic salt, onion salt...) and place them in a pre heated 350 degree F oven and cook for a half hour to 45 mins.

This is also the method I use to make sweet potato fries. Sweet potatoes cook faster than white so keep an eye on them!

Its easy just peel (or not ) a good bunch of potatoes. cut them up to a size you like ,usually long ways. Get a deep fat firer and a basket .Heat the oil up (HOT be careful) put the potatoes in the basket and put the basket into the oil leave for a while ,,just how long depends on how hot the oil is and how thick the cut potatoes are.Pull french fries out (magical huh?) There are french fry cutters available at kitchen stores may have to search a few though. Practice makes perfect!

This recipe came from Adele Davis cookbook. I will see if I can remember the recipe for homemade fries:
Scrub several potatoes or you can peal them. Slice them into long strips then rinse them in cold water and pat dry. Put in large bowl, sprinkle salt and paprika and a little olive oil. Just enough to slightly coat them as you sir them. Lay them out on a cookie sheet and bake in about 375-400 oven for about 20 minutes until golden brown. These are very low in fat and delicious!

Take a potato, either peel it (with a sharp knife or peeler {careful duh!}) or you can also wash it really good with water and leave the skin if you prefer. Cut it lengthwise and into thin slices about a half an inch thick. Then cut it in half. Either use a deep fryer and fry them in vegetable oil or an oil of your liking. Fry them til they are golden brown. Or you can bake them until crispy in an oven at 400 degrees or 450. Bake for 25 min and periodically check them, when they are golden brown they are done. Also if you fry them, use paper towels to catch most of the oil after frying! You can also add seasonings before baking such as ranch dressing or onion soup in packets. Or salt and pepper to taste! Voila home fries!

Here is a simple and FANTASTIC recipe! It works especially well with sweet potatoes too.

pre heat oven to 400 degrees

Cut the potatoe into big wedges.
rub extra virgin olive oil all over them.
season with salt and pepper.
bake @400 for 35 minutes. (until soft and slightly brown check every 15 minutes because I cant remember the exact time)

slice raw potatoes up the size of fries deep fry them and put french fry seasoning on them

Peel the potato,
cut it like a french fry,
