Wow, that's a lot choices! I guess I would have to say these: Blue, Swiss, Pepper Jack, Monteray Jack, and Feta.

I like a good, rich Havarti with a couple slices of Royal Riveria pear.
But for a sandwich I generally prefer a slice or two of smoked swiss.

Cheddar, slightly sharp. Colby jack and swiss are great too, but only when you have them with something. Cheddar can stand on its own.

why ya gotta be a show off? do you know half those cheeses, or did you copy them down?
I used to work in a gourmet market, so I have heard of them, but I do not know the flavors!

Mmmmm cheese....I love cheddar, swiss, and just about all of them except really strong blue cheese.
