I want a career as an Aircraft Mechanic(A&P mechanic).
I'm not sure which rating would be better, AD(Aviation Machinist Mate) OR AM(Aviation Structural Mechanic)??

Start with changing your name to Navy Boy... I believe you would have more opportunities later with structural mechanic...

Navy air means some time at sea. If you're on an aircraft carrier, life is not too bad. Busy, noisy, dangerous, etc. but more comfy than on a smaller ship.
Smaller ships now also have choppers that need mech's too. More exciting, more "real navy" as in bouncing around in waves larger than your ship, etc. and a closer social community.
Hey, the army has similar needs, you know....:-)

Structural Mech would transfer better to a civilian job.
