Police officers in unmarked cars may wear a uniform, a business suit, or dress slacks and a golf shirt. It depends on their assignment. For example, a traffic patrol officer in an unmarked car will be in full uniform. A detective may wear a suit. A crime scene officer may wear a golf shirt and slacks.

Undercover police officers usually do not sit in marked police cars while working undercover, as that would undermine their cover. To answer your original question, they wear normal clothing.
