The above seven answerers don't know iron. What's happened is a layer of grease has been left on the skillet and it's gone rancid. You'll need to scrub the skillet well in hot, soapy water, rinse, repeat, and then dry thoroughly. Then you have to re-season the skillet. All that nonsense about vinegar and lemon is ineffective and will only make the problem worse.
To re-season, make sure it's dry. Coat the skillet inside and out with Crisco. Place skillet in your oven and bake it at 350 degrees for an hour. It's a good idea to put the skillet on the top rack and a layer of aluminum foil or a cookie sheet beneath it on the bottom rack to catch the drips from the melting Crisco. Once the hour has elapsed, turn off the heat and leave the skillet in the oven until it's come to room temperature. Remove it and wipe it inside and out with dry paper towels. Store in a dry place until needed. If you have to stack it with other cookware like I do (hey, we ain't all gots the roomy kitchens like Emeril), put a single layer of paper toweling between items. If you have a skillet with a lid, store it with the lid off...and be sure you've seasoned the lid, too.

Here's what you do:
1. Squeeze the juice of one lemon into the skillet. Add a tablespoon of baking soda.
2. Rub the lemon juice and baking soda into the cooking area of the skillet for a minute or two.
3. Leave the skillet sitting for a few hours and then rinse well with warm water.
Voila! You're done. :)

assuming that you are asking about a cast iron skillet; throw it into a fire and let it stay there until the fire is out. After it is cooled down, wash it with soapy water. Then treat it with vegetable oil.
Any other type of skillet; throw it away and buy a new one.

If it is cast iron, you can do it. If it's stainless you might be unsuccesful. If it's non-stick, get a new one. With cast iron you scrub out the odor with some previous suggestions but then you have to re-season it by giving it a veg oil coating and baking it out as someone suggested.

Vegtable oil and try washing it in a pot with a garlic press...believe it or not, the material in the garlic press is made to neutralize odors and tatses when contacting water.
