Royal Hawaiian Pie:
2 (9 inch) pie shell
4 cups sliced bananas
1/2 cup unsweetened pineapple juice
1/2 cup white sugar
1 teaspoon ground cinnamon
2 tablespoons butter

DIRECTIONS:
Preheat oven to 400 degrees F (200 degrees C).
Place sliced bananas in a medium bowl and cover with pineapple juice. Toss gently until slices are coated. Let soak for 30 minutes, then drain. Place bananas in pie shell.
In a small bowl mix sugar and cinnamon. Sift over top of bananas. Dot with slices of butter or margarine. Put on top crust and seal, slashing 2 to 3 vents near center. Bake in preheated oven until crust is golden brown, about 30 minutes. Pie can be served hot or cold.

MIKE’S PINEAPPLE PIE

1 large can crushed pineapple, with juice
¾ cup sugar
½ stick butter
1 tsp. cornstarch (or 2 ts. flour)
1 large deep dish pie crust
1 flat pastry for top crust

Combine all ingredients except crusts in saucepan and cook until sugar is melted. Pour into pie crust and cover w/ top crust, sealing edges. Cut slits in top crust. Bake at 375ºF until crust is golden brown.

Take an angel food cake, slice it into three LAYERS.
Take Cool Whip and mix it with crushed pineapple, DRAINED.
Layer the cake layers with plenty of the Cool Whip/pineapple mix, then coat the whole thing with the rest of the "icing."
Sprinkle coconut that has been dyed with food coloring (shake in a container with a few drops) over the cake.
Cut the cake into slices, then separate them just a bit.
Fill the center hole with maraschino cherries.

AMBROSIA MOLD
1 can (8 ounces) crushed pineapple in juice, undrained
2 cups boiling hot water
1 package (8-serving size) orange flavor Jello
1 3/4 cups Cool Whip
1 can (11 ounces) mandarin orange segments, drained
1 1/2 cups miniature marshmallows
1/2 cup coconut
Drain pineapple, reserving liquid. Add cold water to liquid to measure 1 cup.
Stir boiling water into jello in large bowl until completely dissolved. Stir in measured liquid.
(1 cup) Refrigerate 1 1/4 hours or until slightly thickened.
Stir in cool whip with wire whisk until smooth. Refrigerate 10 minutes or until mixture will mound. Stir in oranges, pineapple, marshmallows and coconut. Spoon into 6-cup mold.
Refrigerate 4 hours or until firm. Unmold and serve.

STELLA DORA ANGINETTI CREAM PUFFS
8 oz. pkg. softened cream cheese
1 can crushed pineapple, drained
4 oz. Cool Whip
2 pkgs. Stella Dora Anginetti's
Mix cream cheese and pineapple together. When mixed good, stir in Cool Whip. Blend all together. Cut Anginetti in half lengthwise and put about 1 teaspoon of filling in between both halves like a sandwich. Refrigerate to set overnight. (the recipe is on the back of the ANGINETTI package )

PINEAPPLE LADY FINGERS DESSERT
3 packages lady fingers
1 package (8 ounces) cream cheese
3/4 cup sugar
1 teaspoon vanilla extract
2 cups crushed pineapple
1 can pineapple pie filling
1 pint whipping cream
1/2 cup walnuts (chopped - optional)
Drain crushed pineapple; and combine with pie filling in large bowl.
In medium bowl, beat cream cheese, sugar and vanilla extract until smooth. Fold this mixture into the pineapple mixture.
Whip cream in another medium bowl until almost stiff and holds peaks.
Fold the whipped cream into the pineapple-cheese mixture.
Line lady fingers around the sides and bottom of a 9-inch spring form pan.
Pour 1/2 of cream mixture into the springform pan and then top with more lady fingers and the rest of the cream mixture. Top with chopped nuts. Refrigerate overnight.

Soak pinapple rings in coconut milk for 20 min +. Grill on high until rings have a crystalized outer layer (about 3 min on a charcoal grill.) Dust with cinamon and serve.

I make this salad, and it's so sweet it can be dessert.
One box of instant pudding (3 1/2 ounces) poured over one 20 ounce can of pineapple, juice included. Stir. Add cool whip. Add chopped nuts if desired. Add grapes if desired. Add cooked cooled macaroni shells or rings.
Pudding can be pistachio, banana cream, coconut, or vanilla.
