I don't really like/eat meat. I eat a little chicken....maybe tuna...but thats it..no ham or turkey or beef or any of that. I'm pretty hungry but I don't want to go out too much...and I don't really want to heat the house up too much. Give it your best shot!

here's 2 great refreshing recipes that is filling and not expensive
CHICKEN SPINACH SALAD
1 bunch fresh spinach washed and dried, or cheat and get the prewashed ones at the market
1 chicken breast, grilled or boiled, then diced and chilled.
1/4 c dried cranberries
1/4 cup chopped pecans or walnuts or both.
sunflower seeds
feta cheese
a viniagrette dressing
Mix ingredients together and serve chilled. Goes great with a glass of iced tea! Feeds 1-2
MEXICAN CABBAGE SALAD
1 cabbage, finely sliced
1 avocado, ripe, peeled and diced
1/2 bunch cilantro, finely diced
1/4 c diced celery
1/2 brown onion, diced
1 fresh jalapeno, seeds removed then diced
Mayo
salt/pepper to taste
In a large bowl - Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.
Add the avocado then 2 -3 tbsp of mayo or just enough to moisten to your taste. Mix well.
Chill for 1 hour and serve cold

I say anything of the asian variety. Which mostly consists of veggies and lots of good spices. Not to mention, you can top it off with some steamed rice and a veggie egg roll. Or you can lean towards the heavier side and make an asian dish with noodles stir fried with veggies in it, no meat of course. You could use schezwan sauce to spice it up, or just plain old stir-fry sauce and soy sauce. They should have those bottled sauces at the grocery store. So, its easy to make, quick and healthy!!

Tuna melt! All you need is bread, tuna, cheese, a little mayo, a little butter on the outside of the sandwich, then grill it in a nonstick pan on the stove for a few minutes. Yummy!

You've got some very good answers so far. Here's mine: Cook up some pasta. After you rinse it, put some olive oil on it and stir. Cube a package of feta cheese - its a sour greek cheese, in case you need to substitute. Mix it in with the pasta. Add half a jar of black olives. Serve with salad and white wine.

How about a chef salad? You could add chicken if you would like or leave it out. Add cheese, olives, kidney beans, hard boiled eggs (if you eat them) and anything else you can think off. Add a little dressing and croutons, dinner is served!!! Fast and easy!
