cream cheese icing like on a carrot cake

One 8-once package cream cheese, softened
1/4 cup butter, melted
2 tbs vanilla
One 1-lb. box confectioner's sugar

1. With an electric mixer, beat the cream cheese until it is light and fluffy.
2. Gradually add the melted butter, beating until it is completely absorbed.
3. Add the vanilla and the sugar, beating well after each addition so that the icing is smooth.

Remove the cooled cake from the pan, then smooth the icing over the top and sides.

I love cream cheese icing on pumpkin cake. Just buy a can of frosting and use it. If you want it like a glaze, then you can put it in the microwave (remove the lid and seal first), and heat it until it's runny, then stir and pour over. :) You're making me hungry! :)

I block of Philly cream cheese, 1 cup powdered sugar, 1/2 tsp. vanilla extract. Beat until smooth, occasionally adding a glug or two of milk until smooth and spreadable consistency. This is also great on carrot, zucchini, or spice cake.
