I use the normal Cornbread mix ..mix in a can of creamed corn or jalapenos or grated cheese (or all 3 !) also adding some pimento Cheese to the Batter gives extra Moisture.Always brush with melted butter just before done!

Ohhh Southern cornbread is soooo good!

You need about 1/8 cup of bacon grease.
About 3 cups of yellow self rising cornmeal.
2 eggs
milk or buttermilk.
Cast Iron Frying Pan (most important)

Put the cornmeal in a bowl and add the eggs.
Add milk. You want a pancake batter consistency.

On the stove, heat the frying pan with the bacon grease in it. You want to get it HOT enough that it is almost smoking but don't burn the grease. Watch it carefully.
When the grease is good and hot, pour the grease in the bowl. It will sizzle a little, that's ok. Now, mix the grease in gooooood with the batter. (You want to leave a little grease in the frying pan.) Pour the batter into the frying pan and cook in 400 degree oven until golden brown.

I'm from the south. This is so easy to do. You don't have to get it exact, it will turn out. If your not pleased with it the first time I promise the more you make it the better it gets. That cast iron frying pan makes the best crust ever!!

Try and Enjoy!

You can simply do a search in yahoo for cornbread recipes.
Or you can just get a mix from the store (usually in the same aisle as flour).

But, cornbread is suppose to taste dry. It should suck all the moisture from your mouth, and almost crumble when you pick it up. That's why we southerners like to wash it down with a large glass of sweetened Iced Tea. (Add the sugar while the tea is hot to make sure it is dissolved).

Finally, I know some people prefer different styles of cornbread, so ask your husband for his input. Who knows, he may even have a recipe (or his mom will).
