What do you do if you think your girlfriends mom doesn't like you, and you know she worries and obsesses over your relationship with her daughter? The girl has told me I shouldn't worry what her mom thinks, only what she thinks?

Do really sweet, harmless things for your girlfriend, like cooking her breakfast and bringing it over to her house, or getting the radio station to dedicate a song to her, and make sure her mum witnesses them. Make a point of spending time with her whole family, getting to know them, so that they know that you're not just trying to get in your girlfriend's pants. Maybe you can get your girlfriend to casually mention to her mum some of your accomplishments, like good marks in school, or volunteer work or something. Just give the impression that you're a really nice guy who doesn't want to violate her daughter (your actual intentions are beside the point).
And, yes, it does matter what the mother thinks. It makes life easier for everyone if she likes you.
