I don't want to use canned pie filling.

to make a cherry pie u use the sweet cherries otherwise u will have a sour pie and it will not be good... therefor i would suggest the supermarket kind...
( i am looking for a future career as a chef... )

yes, you just need to cut down the amount of sugar. 1/2 cup should do it, but i don't know your recipe. If it's too sweet when done, use less sugar next time

Sure - I use them all the time in pies, jams, crumble, and cobbler.
