Buy some good Italian bread, fresh mozzarella cheese, pesto in a jar, and roma tomatoes. Slice cheese and tomatoes, and spread the pesto on the bread to make sandwiches. Delicious.
You can always buy the fully cooked shrimp at the supermarket, and have a tasty shrimp salad with avocado, cucumber, and tomatoes topped with a garlicy vinegarette.
Hummus is also delicious. No cooking there.

Try this pasta salad
1 box of pasta..can be spaghetti or the corkscrew kind..Boil till tender and drain, add a little olive oil or vegetable so it won't stick on itself..chill
1 large peeled and diced cucumber
1 medium cleaned and diced green pepper
5 plum tomatoes chopped, more if you want more tomatoes
small yellow onion or 5 or 6 green onions cleaned and chopped
greens and all
salt and pepper
Add the vegetables to the pasta then add a large bottle of your favorite Italian salad dressing..I like 7 seas but what ever your favorite is...Mix everything together, toss and chill for a cope of hours..
You can add salami, pepperoni, or diced chicken if you want some meat added..the salad is very refreshing and filling and tastes even better the next day...enjoy.Serve with hard rolls and butter...

Here's a easy cheesecake recipe...
2 packages of cream cheese softened
1/2 cup brown sugar
2 eggs
1 tablespoon of vanilla
Mix the above ingredients with a beater..pour into a already prepared graham cracker crust..and bake at 350 for 40 minute or until the middle comes clean..let cool and serve with fruit such as strawberries over the top..

yesterday I made a terrific cold cucumber soup:
4 cucumbers, peeled, halved, and seeded
3 Tbsp dill, chopped
2 peeled garlic cloves
1/4 cup walnuts
2 cups unflavored yogurt
Juice of 1/2 a lemon
1 cup cold water
1/2 cup extra virgin olive oil
salt and pepper to taste
Blend all of the above in a food processor until smooth. Chill 1 hr before serving.
Then, to add some protein to the meal, I made a really yummy smoked salmon salad:
4 oz. smoked salmon, chopped
1 ripe avocado, pitted and cubed
1/4 chopped red onion
1 tbsp dill
1/2 cucumber, peeled, seeded and chopped (*NOTE: I actually used 3 1/2 cucumbers for the recipe above, reserving half a cuke for this recipe)
2 tbsp white balsamic vinegar
1 tbsp extra virgin olive oil
1 tbsp lemon juice
Mix all ingredients in a medium bowl. Chill before serving. Can be eaten straight, or served on crackers / melba toast / some other bread product.
All of it was really delicious, totally easy to prepare, and didn't require the stove. Perfect.

Pasta bake an easy win for a family. Almost everyone likes Italian. This is what I use when I make it. Ingredients: 1 lb pasta 1 jar pasta sauce (thicker is better) 1 bag mozzarella cheese Red Pepper flakes 10 ounces of chicken strips (cooked) Put 1 lbs of noodles in a large oven baking dish, several inches deep. Put 1 jar of the best "thicker" sauce you can find, try to not get a watery one because of the next step- Fill the jar of sauce with water, and add it into the dish Add Chicken strips into the dish. Mix dish so sauce dilutes with the water. The water will be absorbed during cooking. Cover with Aluminum Foil, bake at 350F for 45 minutes. Remove, cover with Mozzarella Cheese, and put back in uncovered for 5-10 more minutes. Remove and top with red pepper flakes for extra zest. It's ready to serve!

Do you have a grill? If so throw some brats on there and get really fresh brat buns, pick up some type of salad from you grocery deli and have fresh fruit for dessert.
If you don't have a grill, you need to do something on your stove top. Try making Loosemeats serve with chips and fruit or cook some chicken breast in EVOO with some garlic, or keep it really simple with some Hamburger Helper (their lasagna or zesty Italian is pretty good) have them with some nice fresh bread.

Chicken Ceasar Salad
Using a precooked rotisserie chicken makes this salad extra easy and fast, although any leftover cooked chicken will work.
Salad:
1 (2-pound) whole roasted chicken, skinned
11 cups torn romaine lettuce (about 1 1/4 pounds)
1 cup red bell pepper strips
Vinaigrette:
3 tablespoons olive oil
1 1/2 tablespoons fresh lemon juice
2 teaspoons Worcestershire sauce
2 teaspoons Dijon mustard
1/4 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon black pepper
1 garlic clove, crushed
1 1/2 cups plain croutons
1/2 cup (2 ounces) grated fresh Parmesan cheese
To prepare salad, remove chicken from bones; shred with 2 forks to measure 3 cups meat. Combine chicken, lettuce, and bell pepper in a large bowl.
To prepare vinaigrette, combine oil and next 7 ingredients (oil through garlic) in a bowl, stirring well with a whisk. Pour over salad; toss well. Sprinkle with croutons and cheese; toss gently to combine.
Yield: 6 servings (serving size: 2 cups)

CHOPPED SALAD WITH TUNA & GARLIC
6 tbsps. olive oil
1 clove minced garlic
1/4 cup red wine vinegar
1 (12-16 oz.) bag mixed salad greens (make sure the mix includes romaine lettuce)
2 (6 oz.) cans tuna packed in water; drained well
salt & pepper to taste
In a large bowl, whisk together oil, garlic, and red wine vinegar. Add mixed salad greens, tuna, salt, and pepper; toss well. Serve immediately (serves 4).

MEXICAN SHRIMP COCKTAIL
Ingredients:
2 lb shrimp, cooked, peeled and deveined. Chilled.
4 med tomatoes, diced
1 bu cilantro, finely chopped
1 fresh jalapeno, diced
2 cloves garlic, crushed
1 onion, diced
1 large avocado, diced.
1 large bottle ketchup
1 jar cocktail sauce, hot or mild
hotsauce, like tabasco or tapatio
6-8 lemons
saltine crackers
In a bowl, add shrimp and squeeze lemon juice from 1 or 2 lemons on it. Put back in fridge.
In a large stock pot, add 4 cups cold water.
Add the entire bottle of ketchup, cocktail sauce, cilantro, jalapeno, garlic, onion, tomatoes. Stir content until completely mixed.
Squeeze 4 lemons into the mix. Add hot sauce to the mix according to taste. If you like it hot, add 6-10 tsp. If you want it mild, add a 3-4 shakes (approx 2 tsp).
In a bowl, Add the tomato mixture into the mug then add a serving of the chilled shrimp and serving of avocado. Serve chilled and with crackers.
To make the cocktail hotter, add more hot sauce.
To make tangier, add more lemon juice and ketchup.
Serves 4-6

I live in Fl and some days I agree. I do a fruit, veggie, cheese paltter some nights and my family loves it. I just slice and have several different dips (no one can agree). It is a real casual, once in a while meal that everyone loves.
I get some French bread to go with this also.

ingredients:
1 can of both pinto & red kidney beans
1 chopped onion
1chopped bell pepper
grated chedder cheese
lettuce
fritos
directions: mix together and top with catalina dressing.
you can either mix all ingrediants in a big salad bowl, or store everything separately for individual meals.
